Basic Recipe For Preparing Cherry Liqueur (Haitian-style)

Haitian-style cherry liqueur

“Cherry Liqueur” is a Haitian cherry liqueur appreciated for its sweet and fruity flavor.

Ingredients

  • 2 cups fresh or frozen cherries, pitted
  • 2 cups white rum or vodka
  • 1 cup granulated sugar
  • 1 cup water
  • Optional: 1 stick of cinnamon, 2 to 3 cloves, 1 to 2 strips of orange or lemon zest

Instructions

  • In a saucepan, combine the cherries, sugar, water and optional spices or citrus zest.
  • Heat the mixture over medium heat, stirring occasionally, until gently boiling. Reduce the heat to low and simmer for about 10 to 15 minutes. This helps infuse the flavors and dissolve the sugar.
  • Remove the pan from the heat and let the mixture cool completely.
  • Once cooled, transfer the cherry mixture to a clean glass jar or airtight container. Pour the white rum or vodka into the pot with the cherry mixture.
  • Seal the jar tightly and store in a cool, dark place for at least 1 to 2 weeks, or longer if desired. The longer it sits, the more the flavors infuse.
  • Gently shake the jar every few days to help blend the flavors. After the desired steeping time, pass the liquor through a fine mesh sieve or cheesecloth to remove the cherry solids and any other added ingredients, leaving you with a smooth, cherry-flavored infused liquor.
  • Transfer the filtered liquor to a clean bottle or container for storage. Serve Haitian cherry liqueur chilled or at room temperature as a delicious after-dinner drink or use it as a flavorful ingredient in cocktails or desserts.
