Dous Makòs Haitian Dessert
“Dous Makòs” is a popular Haitian dessert, similar to fudge, known for its rich, creamy, sweet flavor. It is composed mainly of milk, sugar and spices.
Ingredients
- 4 cups whole milk
- 2 cups granulated sugar
- 1 cup evaporated milk
- 1 cup sweetened condensed milk
- 1 cinnamon stick
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground nutmeg
- Pinch of salt
- Butter or oil to grease the pan
Instructions
- Grease a baking dish or square or rectangular pan with butter or oil and set aside.
- In a large, heavy-bottomed saucepan, combine the whole milk, caster sugar, condensed milk, sweetened condensed milk, cinnamon stick, ground nutmeg and a pinch of salt.
- Place the saucepan over medium heat and stir the mixture continuously to dissolve the sugar and prevent it from sticking or burning. Use a wooden spoon or heat-resistant spatula.
- Let the mixture boil gently, stirring frequently. Once boiling, reduce heat to low to maintain a simmer.
- Continue cooking and stirring the mixture frequently for about 45 minutes to 1 hour, or until it thickens considerably and reduces in volume.
- As it thickens, the mixture will take on a caramel color. Be careful as it thickens, making sure it does not stick to the bottom of the pan.
- When the mixture has thickened considerably and begins to pull away from the sides of the pan when stirred, remove the cinnamon stick from the mixture.
- Add the vanilla extract and mix well with the Dous Makòs mixture.
- Once the mixture has thickened, pour it into the greased dish or mold.
- Smooth the surface of the Dous Makòs with a spatula or spoon. Let the Dous Makòs cool and set at room temperature for a few hours or refrigerate until firm.
- Once set, cut the Dous Makòs into squares or desired shapes for serving.
