Haitian Griyo

Griyo is a popular Haitian dish made with fried pork. Here is a simple recipe

Ingredients

  • 2 lb pork shoulder, cut into pieces
  • 1 sour orange juice
  • 4 gloves garlic and leeks, minced
  • 1 tablespoon adobo seasoning
  • 1 teaspoon thyme
  • 1 teaspoon parsley
  • 1 chily pepper, optional for spiciness
  • frying oil
  • salt

Instructions

  • Wash the pork with salt, water, sour orange juice then marinate the pork in sour orange juice, garlic, leeks, adobo seasoning, thyme, chili pepper, salt and pepper. Leave to marinate for at least 2 hours or overnight in the refrigerator.
  • Boil the marinated pork pieces until cooked, then drain them.
    Heat oil in a deep fryer or large skillet to 350°F (175°C).
  • Fry the marinated pork pieces until golden and crispy, about 8 to 10 minutes.
  • Drain excess oil on absorbent paper.
    Serve the griyo hot and enjoy with pikliz (spicy marinated vegetables) and fried plantains.
