Recipe for “Taso Kabrit” – Marinated and Fried Goat Meat

Recipe to prepare Taso Kabrit

“Taso Kabrit” is a traditional Haitian dish made from marinated and fried goat meat.

Ingredients

  • 2 pounds of goat meat, cut into bite-size pieces
  • 4 cloves of garlic, minced
  • 1 finely chopped onion
  • 1 Scotch Bonnet pepper or habanero pepper, chopped (adjust to taste for spiciness)
  • 2 tablespoons of vinegar, white vinegar or apple cider
  • The juice of 2 limes
  • 1 teaspoon of dried thyme
  • 1 teaspoon of ground cloves
  • 1 teaspoon of ground cinnamon
  • 1 teaspoon of paprika
  • Salt and black pepper to taste
  • Vegetable oil for frying

Instructions

  • In a large bowl, combine the goat meat with the minced garlic, chopped onion, minced Scotch Bonnet pepper, vinegar, lime juice, dried thyme, ground cloves, ground cinnamon, paprika, salt and black pepper. Mix well to coat the meat well with the marinade.
  • Let the meat marinate in the refrigerator for at least 2-3 hours, or preferably overnight, to enhance the flavors. Then cook the meat over low heat.
  • Heat the vegetable oil in a deep skillet or skillet over medium-high heat.
  • Once the oil is hot, carefully add the marinated goat meat pieces in batches, taking care not to overcrowd the pan. Fry the goat meat until browned and crispy, turning occasionally for even frying. This usually takes about 8-10 minutes per batch.
  • Use a slotted spoon to remove the fried goat meat (Taso Kabrit) from the oil and place it on a plate lined with paper towels to drain excess oil.
  • Repeat the frying process with the remaining batches of marinated goat meat until all the meat is fried.

Notes

Serve Taso Kabrit hot as a tasty main dish. It can be accompanied by pikliz (spicy pickled vegetables) and served with rice, fried plantains (Bannann Peze) or other side dishes of your choice.
