Recipe for Pate Chodyè
Pate Chodyè is a popular Haitian street food consisting of a dough filled with a spicy meat mixture.
Ingredients
- 2 packages of chopped hot dogs
- 1 cup finely chopped Aransò, optional
- 1 onion, finely chopped
- 3 tomatoes, finely chopped
- 2 cloves of garlic, chopped
- 1 pepper, finely chopped
- 1 scotch bonnet pepper or hot pepper, finely chopped (adjust according to your spice preferences)
- 2 tablespoons of tomato paste
- 2 tablespoons of olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
For the dough
- 14 cups all-purpose flour
- 1/2 tablespoon salt
- 1 tablespoon sugar
- 1/4 tablespoon soda
- 5 cup water
- 5 tablespoons shortening or vegetable oil, or butter
Instructions
- Start by preparing the dough. In a large mixing bowl, mix flour, sugar, soda and salt well. Incorporate the vegetable shortening or oil, or butter using a cookie cutter or your fingers until the mixture resembles a nice pizza crust.
- Divide the dough into smaller balls, each about the size of a golf ball. Roll out each ball into a thin circle on a floured surface. Place a spoonful of the stuffing prepared with the filling ingredients in the center of each circle of dough. Fold the dough over the filling to create a semicircle shape, then seal the edges by pressing them together with your fingers or using a fork. Then fry in fat for about 3-5 minutes.
- Once cooked, remove them from the oil and let them cool for a few minutes before serving.
