Haitian Tablèt Pistach

Here is a basic recipe for Haitian Tablèt Pistach, a popular sweet treat

Ingredients

  • 1 cup cooked shelled pistachios
  • 2 cups granulated sugar
  • 1 cup water
  • 1 tablespoon vanilla extract
  • pinch of salt

Instructions

  • In a bowl, set aside the crushed pistachios.
  • In a saucepan, mix the sugar and water. Heat over medium heat, stirring until the sugar dissolves. Let the sugar syrup boil. Use a candy thermometer to reach soft ball stage (about 235°F or 113°C).
  • Once the syrup reaches the soft ball stage, remove it from the heat and quickly stir in the vanilla extract and a pinch of salt.
  • Pour the hot syrup over the coconut and pistachios mixture. Mix well to combine and evenly coat the ingredients.
  • While the mixture is still hot, shape small portions into round or rectangular pieces on a parchment-lined surface.
    Let the Pistachio Tablèt cool and harden at room temperature. Once completely cooled and firm, the Pistachio Tablèt is ready to be enjoyed!
